RBBTS is an earth-conscious café aiming is to satisfy their customers with a menu prepared using local ingredients. Owner Thomas Desimone, stresses the importance of supporting other small businesses in New York, such as purchasing their fine meats from Pino’s Prime Meats (the local butcher around the corner) that has been in business for more than a century. RBBTS also promotes its affiliation with Tri-State Biodiesel, a local company from the Bronx that recycles used cooking oil into reusable fuel, to help further reduce harmful emissions that contribute to global warming, acid rain, and smog. Furthermore on the green front, RBBTS offers no-emission food delivery, by way of bicycle and skateboard. The café is warm and inviting, featuring the work of different local artists each week. Customers are welcome to be creative with the menu items, and according to Desimone, the customer’s ability to alter a meal to their own tastes is what makes Rabbit’s unique.
